This Wusthof knife sharpener is suitable for sharpening and honing knives at an angle of approximately 17 degrees. In addition to all Wusthof knives, this knife sharpener is also suitable for other kitchen knives with a sharpening angle of 17 degrees.
The Wusthof Gourmet Knife Sharpener has two stages, a coarse carbide sharpener and a fine ceramic sharpener. You use the coarse sharpener for knives that you sharpen for the first time with the sharpener or that have not been sharpened for some time. Phase 2 is a finer sharpener, intended for refining the edge. With this, you make the knife razor-sharp again. Due to its fineness, almost no steel is removed from the blade. After use, we recommend wiping the knife clean with a damp cloth to remove any residue.
