The Japanese Global Sharpening steel G45 is one of the sharpening steels found in the Global G series. The sharpening steel has an overall length of 37 cm and is made of 1 block of steel. The bar has a diameter of 1.4 cm and is made of ceramic. The sharpening steel is therefore ideal to use for minor maintenance. When a knife is blunt or damaged, it is better to use a sharpening stone or knife sharpener for better results.
The brand from Japan Global carries 5 different knife series, including the G series. The knives of the Global G series are intended for professional and hobby cooks and are made of Cromova steel. This stainless steel is known for its light weight and hardness of 56 -58 Rockwell. The knives from the G series are therefore sharpened at an angle of 17°. To get a good sharp knife, it is important to start at the handle and end at the tip of the knife. Also use the entire length of the steel for this. The sharpening angle between the knife and the sharpening steel is between 10 and 20 degrees and depends on how the knife is sharpened. If you use too small an angle, you will see little result because you will only polish the side of the knife. If you start using too large an angle, the angle of the knife will also change.
