Before you buy a new De Buyer pan into use, it is important to prepare it properly. Here are the steps you should follow to get the most out of your pan:
1. Cleaning the Pan
- Remove the protective coating: New De Buyer pans are coated with a layer of beeswax or other protective coating that prevents rust. Heat the pan over medium-high heat and allow the wax to melt and drip out of the pan.
- Cleaning: After removing the wax, wash the pan with hot water and a mild detergent to remove all residue from the wax. Use a soft brush or sponge to avoid scratching.
2. Burning in the Pan.
- Dry the pan: After thoroughly cleaning the pan, dry it completely.
- Heat the pan: Heat the dry pan over medium-high heat until it begins to smoke. This will cause any remaining moisture to evaporate.
- Add oil: Add a thin layer of vegetable oil to the pan; flax seed oil, grapeseed oil or sunflower oil work well because of their high smoke points. Make sure the entire inside is covered with oil.
- Reheat: Reheat the pan until the oil begins to smoke. Rotate the pan to make sure the oil is evenly distributed over the surface.
- Allow to cool: Allow the pan to cool. Wipe off excess oil with paper towels. Repeat this process several times if necessary to build a stronger seasoning layer.
3. After Seasoning
- Storage: After burn-in, your De Buyer pan is ready for use. Store the pan in a dry place and place a kitchen paper in the pan to absorb moisture and protect against dust.
