The amuse shells are derived from the "Pétoncles Noirs". The Pétoncle is a small variant of the scallop Saint-Jacques. He lives especially in France on the coast of Charente - Maritime and Brittany. The Pétoncle Noir has a black, Bordeaux-red color, has two curved valves and a cut ear in the hinge.

The amuse shells are packed per four pieces in a luxurious black box with certificate of authenticity. The shells are a pure pewter product and are traditionally cast in the Netherlands.
