Burning in de Buyer pans
Before you can use a de Buyer pan, you must first burn it in to create a non-stick layer. To burn in the pan you need a type of oil, however, olive oil does not work well, it cannot handle high temperatures. Put the pan on the cooker and heat it on low heat. Pour a generous layer of oil into the pan and let it boil for 5 minutes. Do not be alarmed by the formation of smoke, this is normal. After 5 minutes you can pour off the oil and dry the pan with kitchen paper, the idea is to leave a small layer of oil in the pan. From now on, you can use the pan normally.
How do you maintain a de Buyer pan?
During use, the pan becomes increasingly blacker and better protects against sticking. Never wash the pan with washing-up liquid after use. Hot water is sufficient to clean the pan. This way, the pan remains slightly greasy and the non-stick coating remains intact. The longer the pan is used, the better the non-stick coating becomes. The pan, if you keep treating it well, can last your whole life!
