Blackwell cast iron pots and pans

For almost every cooking technique, Blackwell offers a suitable pan in its range. Whether you want to fry, roast, grill, wok, stew or simmer, we have a pan to suit. Most pans are free from chemicals, as they have no non-stick coating. The high-quality cast iron ensures long life, it withstands high temperatures and ensures even heat distribution. In addition to cast iron pans, Blackwell also offers sheet steel pans. These are suitable for all heat sources and have fast heat conduction.

How to season sheet steel pans?

Carbon steel pans are a great addition to any hobby or professional cook's kitchen. These pans have no non-stick coating, making them a healthier choice. Due to this coating, however, the pans need to be seasoned before use, to ensure maximum efficiency. This is how we recommend you "break in" your sheet steel pan:

  • After purchasing the pan, we recommend that you first clean it thoroughly with a sponge and/or
    brush under hot water. Then dry the pan thoroughly and place it on the cooker.
  • Put a layer of vegetable oil (peanut oil or sunflower, not olive oil, as this burns) in the pan and place it on a heat source that is not too hot (do not burn in on induction).
  • Wait until the oil glows, turn the heat source off and let the pan cool down. Using kitchen paper towels, smear the remaining layer of oil all over the whole pan. The pan will now darken a bit (as it develops a patina layer) as it becomes ready to use.
  • If necessary, you can repeat this process several times for a better layer. As a result, the patina layer gets darker each time.

How to take care of Blackwell pans?

The pan can rust during its lifetime. It should therefore not be put in the dishwasher. Washing with
(washing-up) soap is also not recommended. Just as soap removes the oil from your pans during dishwashing, this soap will also do the same to the oil you have just burnt in (and thus damage the patina layer). Should this happen, you would have to season it again.

How to clean the pan

The best way to clean the pan properly is to rinse it with a brush under hot water. After washing, the pan should be dried well and cared for with a drop of oil that is smeared over the pan with a kitchen paper towel.

What is a tagine?

In its range of cookware, Blackwell also offers tagines. Tagine originates from the North African ceramic pot and the resulting slow-cooked dish cooked in it, 'tajine'. It is an easy way to steam and slow-cook meats and vegetables either on the hob or in the oven. Because of the lid, the steaming inside the tagine results in a higher moisture level, and thus reduces the need for cooking liquid.
